Grilled Bluehouse Salmon

on top of orzo pasta

By far one of the easiest and simplest recipes I have ever made. I am using Bluehouse salmon as my main ingredient on top of delicious and tasty orzo pasta in this dish. This dish will definitely impress your guests and since it's cooked on the grill everyone can gather outside and enjoy an amazing Sunday Funday. 

I was introduced to Bluehouse salmon a few months ago and loved the idea of raising fish in an environment that is healthy and clean with no antibiotics and parasites to harm the fish and consumers. Bluehouse salmon is originally from Denmark and recently opened its new location in Miami, Florida. These Bluehouses are “like a greenhouse. A greenhouse gives plants an ideal environment---and our Bluehouses do the same for salmon. In our land-based Bluehouses, our fish swim healthy, happy, and stress-free. As a result, we can all feast while our oceans thrive.” 

Now let's start cooking, YAY!!!

-Ingredients for salmon wet rub:

  • 2  6-8 ounce skin-on pieces of Bluehouse salmon
  • 1 cedar grilling plank, soaked in water for about 1 hour
  • 2 teaspoons of Salt
  • 2 teaspoons of fine ground pepper
  • 1 teaspoon of chili powder
  • 2 teaspoons of smoked paprika
  • 2-3 Tablespoons of Brown Sugar
  • 2-3 Tablespoons of olive oil
  • 1 large lemon ½ of the lemon for the juice and cut the other half into circles to place on top the salmon

Simply mix all the ingredients. No need to melt the sugar, just make sure everything is mixed thoroughly.

Place the Bluehouse salmon on the cedar plank and rub the sauce on the top and sides of the fish. Place lemons on top. I added jalapenos to make it spicier. 

Place the cedar plank with salmon directly on a hot grill, and cook over medium heat for 15-20 minutes or longer if you like the salmon drier. 

Be careful, the cedar plank can burn with flames, simply lower the heat and do not open the grill. And of course, if it looks dangerous turn off the grill.

-To make the Orzo pasta:

  • 1 cup orzo pasta
  • 2-3 cups shitake mushrooms cut into halves 
  • ½ yellow bell pepper chopped into small pieces 
  • 2 cloves of Garlic chopped 
  • 2 Pearl onions chopped 
  • Salt and pepper as needed
  • 2-3 tablespoons Olive oil 
  • 1 cup Vegetable or chicken broth
  • Handful of cilantro

Cook orzo pasta according to the instructions on the package and let it cool.

In one large sauté pan, heat the olive oil on medium heat and add the garlic and pearl onions until golden. Add chopped bell pepper first and stir occasionally for a few minutes, then add mushrooms and continue stirring. Be Careful with splashing and slowly add your broth and seasoning. Lower the heat and continue stirring slowly for a few more minutes and then add the cilantro. This orzo pasta can be served hot or cold.

I made an orzo pasta that goes well with this grilled salmon but you can have almost anything you like with this amazing tasty salmon like a  simple green salad or mashed potatoes and veggies.
